Blueberry Rosemary Oat Scones recipe

Ingredients

  • 2½ cups (about 250 grams) oat flour (oats pulverized into flour — you can process rolled oats in your blender)
  • 1½ teaspoons baking powder
  • ½ cup (about 100 grams) monk fruit sweetener or any sweetener of choice (¼ cup maple syrup (60 ml) would work too)
  • Zest of 1 lemon
  • 1 cup (about 150 grams) fresh or frozen blueberries (I use frozen)
  • 3 tablespoons almond butter
  • ⅓ cup (about 85 grams) applesauce
  • ⅔ cup (160 ml) unsweetened plant milk, preferably soy milk (high in protein), plus 2 tablespoons for glazing
  • 1 tablespoon chopped fresh rosemary leaves
  • 1 tablespoon ground flax seeds

How to make our Blueberry Rosemary Oat Scones recipe

  1. Preheat your oven to 375°F (190ºC).

  2. Line a baking sheet with parchment paper or a silicone baking mat.

  3. Mix flour, baking powder, monk fruit sweetener, and lemon zest in a large bowl, then add the blueberries and toss lightly until they’re coated in the mixture.

  4. Add EVOO, apple sauce, and the milk.

  5. Mix lightly using a spatula until the mixture comes together, adding a touch more milk or flour as needed to form a soft, sticky dough. Be careful not to mix too much.

  6. Transfer the dough onto a lightly-floured surface (e.g. clean kitchen counter) and pat into a circle, one inch thick.

  7. Cut into eight triangles and transfer to the baking sheet.

  8. Brush the scones with a light dash of plant-based milk and bake for 12 to 15 minutes, or until golden.

  9. Let the scones cool, then serve!
