Brain-healthy Chocolate Orange Cardamom Fudge recipe

A delicious brain-healthy treat made with chocolate and orange.

This fudge is creamy, sweetened with dates and an entire orange, and contains no refined sugar. It’s perfect for sharing. I added some cardamom for that ‘wow’ factor! Make and enjoy.

Ingredients

  • 1 whole orange (peels boiled for 20 minutes, drained, and rinsed)
  • ¼ cup (½ stick, 4 tbsp) almond butter
  • ½ cup (60 grams, 2.2 oz) almond flour (2–3 tbsp more if the batter is thin)
  • ½ cup (60 grams, 2.2 oz) sugar-free and dairy-free dark chocolate chips or pieces, melted
  • 2 tbsp cocoa powder (if your chocolate is not dark)
  • ½ tsp ground cardamom
  • 4–6 pitted dates
  • Orange zest on top

How to make our Chocolate Orange Cardamom Fudge

  1. Peel your orange, boil the peels, then blend the boiled orange peels, the orange itself, and the dates.
  2. Melt your sugar-free and dairy-free dark chocolate chips in a large bowl, and mix in the blended orange/dates.
  3. In the same bowl, mix in your almond butter, cardamom, almond flour, and, if you’d more of the cocoa taste, add in your cocoa powder.
  4. Bake to your preference, grate some orange zest onto the top, and freeze for 30–60 minutes before cutting into pieces.

How to store your Chocolate Orange Cardamom Fudge

  • Fudge can be frozen for up to a month. If already cut, separate the pieces with wax paper so they don’t stick together.

  • When you want to serve, take the desires pieces out of the freezer and put them in the fridge (still wrapped). Once thawed, let them stand at room temperature — unwrapped — for 15–20 minutes.
