Herby Quinoa Bowl recipe

An easy-to-make dish that’s herby, zesty, vibrant, tasty, and packed with brain-healthy nutrients!

Broccoli is high in antioxidants like Vitamin C, and flavonoids that protect the brain from oxidative stress.

The peas, edamame, green beans, asparagus, and almonds are vitamin-rich.

You’ll get brain-healthy protein from the quinoa, and brain-healthy monounsaturated fats from the avocado.

Ingredients

For the quinoa:

  • ¼ cup (about 60 milliliters) water
  • 1lb broccoli florets, cut into bite-sized pieces
  • 1 cup (about 150 grams) green peas or edamame (fresh or frozen)
  • 1 cup (about 150 grams) fresh green beans or asparagus, chopped
  • 1½ cups (about 170 grams) cooked quinoa
  • ⅓ cup (about 10 grams) chopped mixed fresh herbs (mint, dill, and flat-leaf parsley work well)
  • 1 ripe avocado, sliced or chopped
  • ¼ cup (about 25 grams) toasted slivered almonds

For the quinoa:

  • 5 tablespoons almond butter
  • ¼ teaspoon minced fresh ginger
  • ¼ teaspoon crushed red pepper flakes
  • Juice of 1–2 large oranges, or ½ cup (about 120 milliliters) orange juice
  • Pinch of salt to taste
  • Freshly-ground black pepper

How to make our Herby Quinoa Bowl recipe

  1. Place a pan over medium-high heat and add a splash or about ¼ cup (about 60 milliliters) water and then add the broccoli, green beans (or asparagus), and peas (or edamame).

  2. Cover with a lid and steam for about 5 minutes until just tender. Remove the lid and let the water evaporate.

  3. For the dressing, whisk together almond butter, ground ginger, pepper flakes, and orange juice in a small bowl until smooth. Season to taste.

  4. Combine the quinoa, vegetables, and the herbs in a bowl and toss with half of the dressing.

  5. Divide equally among three bowls and sprinkle with almonds, and drizzle with more dressing.
