Creamy Miso Broccoli Soup with Spicy Chickpeas

This creamy miso broccoli soup with a spicy, crunchy chickpea topping is incredibly delicious! And it’s packed with veggies, legumes, nuts, and seeds.

I love that we’re not wasting an inch of the broccoli by chopping both the stems and the florets.

Ingredients

For the soup:

  • ½ cup cashews (75 grams), soaked for at least 2 hours
  • 1 yellow onion, diced
  • 5 cloves garlic, minced
  • Extra virgin olive oil (EVOO) spray (optional)
  • ½ teaspoon ground turmeric
  • 4 cups (about 360 grams) chopped broccoli stalks and florets
  • 1 medium carrot, chopped
  • 5 cups (about 1.2 liters) low-sodium vegetable broth
  • 3 tablespoons mellow white miso
  • 2 tablespoons nutritional yeast
  • 1 tablespoon low-sodium soy sauce
  • ½ tablespoon maple syrup
  • 2 tablespoons fresh lemon juice
  • Lots of freshly-ground black pepper
  • 1 15oz (42o gram) can low-sodium or salt-free white beans – divided into 2 (half blended with the cashew cream, half added in the soup for texture)

For the chickpeas:

  • ⅓ cup (about 30 grams) panko or breadcrumbs
  • 4 tablespoons sesame seeds
  • 1 15oz (420 gram) can salt-free chickpeas
  • ½ cup (about 45 grams) broccoli florets (optional, for the looks)
  • 2 tablespoons gochujang paste (or any hot sauce you have)
  • 1–2 tablespoons low-sodium soy sauce
  • 1 tablespoon maple syrup or any sweetener
  • EVOO spray

How to make our Creamy Miso Broccoli Soup with Spicy Chickpeas

  1. Chop the stems and florets of the brococli and cook in a flavorful base of onions, garlic, green turmeric, carrots, and veggie broth, until soft and blendable.

  2. Mix the chickpeas with breadcrumbs and sesame seeds and sautée or air fry to make them crispy.

  3. Season them with gochujang paste, soy sauce, and maple syrup.

  4. Then, blend the soup with the cashew cream, miso, soy sauce, nutritional yeast, and white beans.
